Founded in 1995 by Rob Tod with a single-minded focus on Belgian-style ales, Allagash built its reputation on Allagash White, an unfiltered wheat beer brewed with coriander and orange peel that became one of the defining American interpretations of the Belgian witbier style. It’s still the flagship. It’s still brilliant. Hazy and pale, with citrus and spice weaving together in a way that never feels forced, White is the rare beer that works equally well as a summer afternoon crusher and a thoughtful food pairing companion.
But Allagash’s real legacy lives in its barrel-aging and spontaneous fermentation program. The Coolship series — beers exposed to overnight Maine air before wild fermentation in oak — is among the most respected in the country.
