Co-founders Bill Eye and Ashleigh Carter built Bierstadt around traditional German and Central European lager styles brewed with painstaking attention to process. Their beers undergo extended cold conditioning — weeks or months longer than industry norms — because that’s what it takes to achieve the kind of clarity, crispness, and depth that defines a genuinely great lager. The Slow Pour Pils, a German-style Pilsner served at the bar via the traditional slow pour method, has become one of Denver’s most iconic beer experiences. It takes several minutes to pour correctly. It’s worth every second of waiting.
The RiNo taproom is a gorgeous, airy space that feels like a bierhall without being a costume party. Their food program — schnitzel, pretzels, proper German sides — completes the picture.
