Before hazy IPAs took over every tap list in America, before “juicy” became a required descriptor on every craft beer menu, there was Dogfish Head 90 Minute IPA — a beer that came out swinging in 2001 and still hasn’t sat down.

The gimmick — if you can call it that — is continuous hopping. Hops added every 90 minutes throughout the boil, rather than in two or three additions like a normal brewer would do. The result is a bitterness that layers on itself in a way that’s more complex than your average Imperial IPA, backed by a caramel malt sweetness that keeps the whole thing from going off the rails.

It pours a clear amber-copper with a persistent off-white head. The nose leads with resiny pine, dried apricot, and a hint of toffee that tells you this isn’t going to be a one-note bitterness bomb. First sip confirms it — you get hop resin upfront, then the caramel malt catches it mid-palate, and the finish is long, dry, and satisfying in that way that makes you immediately want another sip.

At 9% ABV it’s deceptively drinkable. The malt backbone absorbs the booze in a way that lighter DIPAs can’t manage. You’ll be halfway through the glass before you remember you’re supposed to be sipping.

It’s been more than two decades. Plenty of craft breweries have tried to out-hop Dogfish Head at this game. None of them have made this exact beer. The continuous hopping method gives 90 Minute a textural depth and bitterness complexity that’s genuinely hard to replicate — you can taste the obsessiveness baked into every sip.

The Verdict: A landmark American craft beer that’s aged better than most things from 2001. If you’ve somehow never had it, fix that immediately. ⭐⭐⭐⭐⭐
