Water chemistry sounds intimidating until you understand what it actually affects — and then it becomes one of the most interesting levers you have as a brewer. You don’t need a chemistry degree. You need to understand five ions and roughly how they interact with malt and hops.
The big five: calcium, magnesium, sodium, sulfate, and chloride. Calcium supports yeast health and clarifies beer. Magnesium is needed in small amounts but harsh in excess. Sodium adds roundness at low levels. Sulfate accentuates hop dryness and bitterness. Chloride enhances malt softness and fullness.
The most important ratio for a brewer to understand is sulfate to chloride. High sulfate (150+ ppm) relative to chloride makes hop bitterness sharper and drier — great for West Coast IPAs and dry stouts. High chloride (100+ ppm) relative to sulfate makes beer fuller and maltier — ideal for English ales, stouts, and hazy IPAs. Balanced ratios work well for lagers, pilsners, and most session beers.
For most homebrewers, the simplest starting point is building your water from scratch (or near-scratch) using RO or distilled water plus mineral additions. Campden tablets (sodium or potassium metabisulfite) neutralize chloramine in tap water if you’d rather start there.
